As of the most recent count from the Institute for New Testament Textual Research (INTF) in Münster, Germany - the official registry - approximately 5,700 Greek New Testament manuscripts have been catalogued. Over 2 million pages. Hundreds of witnesses for every book.
For comparison: Homer's Iliad, one of the best-attested works from the ancient world, survives in about 1,757 manuscripts.
That is not a Christian talking point. That is the shared scholarly baseline.
